Summer salad à la BINDER
Ingredients
Serves 4
- 1 lemon
- Salt, pepper, herbs
- 6 tbsp oil (e.g., avocado oil)
- 2 lettuce hearts or salad leaves of your choice
- 300 g cherry tomatoes
- 250 g blackberries
- 60 g mixed nuts
- 1 large ripe avocado
- 150 g feta
Preparation (30 minutes)
- Mix together the juice from the lemon and 1/2 a teaspoon of salt. Add the oil gradually, stirring it in. Season with pepper.

Wash the lettuce or salad leaves, dry them in a salad spinner, and cut into strips.
Wash and halve the tomatoes. Check the blackberries and discard any with bad sections. Wash them if necessary. Roughly chop the nuts. Halve the avocado
and remove the pit. Using a spoon, remove the flesh from the skin in pieces. -
Cut the feta into cubes. Carefully mix with the avocado, dressing, leaves, berries,
and tomatoes. Scatter the nuts over the salad, and the herbs to your taste.
